就像位於上環文咸東街「五樓廚房」的大廚兼老闆 Friendly，1975 年移居多倫多念高中，隨後完成土木工程學位。可惜（現在應該說可幸）畢業時適逢七十年代經濟衰退，找工作不易，最後 Friendly 輾轉到餐館學師。「學做廚要有好的師傅。我比較幸運，可以跟有份量的大廚學習，包括大會堂美心的「肥鐘」師傅，客家菜名廚麥魯志等。」苦幹了三年後決定和太太 Deborah type='text'>臘製食品泛指用鹽醃漬後再風乾的食物，是一種歷史悠久的烹調和保存食物的方法，差不多在每一個國家的飲食文化中都以不同的形態出現。儘管經歷過幾千年時間的洗禮，臘製食品的地位卻依然迄立不倒。在2008年更有多間新餐廳以自製的臘製食品來做招牌菜，令這種飲食藝術再次受到注意。有些臘製食品做法其實比煮飯更簡單方便，就如以下介紹的「意式臘鴨胸」一樣，只要用普普通通的鹽，加上耐心的等候，就能夠把平平無其的食材，轉化成為美味佳餚。我所用的鴨胸是 曾經說過，「要帶快樂給別人，自己先要樂在其中。」可是在外人來看，當廚師不會是一件樂事――試問誰會享受站在爐火旁邊，在危機四伏油煙滿佈的環境下，週而復始的為客人煮菜至深夜後，還要把整個沾滿油脂的廚房清理乾淨，才有機會休息。要想成為一個出色的廚師，所付出的代價更大；才於去年八月在 Dundas St W. 開業，短短半年內便被選為2009年多倫多十大餐廳之一的醃製肉品專門店 The Black 最近宣佈，因為本地出產的食材價格過高，令公司臨近破產的邊緣，要沽售旗下的餐廳以償還高築的債台。看畢這則報導後有點唏噓：這位全國知名的大廚，早在「百哩飲食」還沒有盛行的時候，便努力推廣「從農場到餐桌」的飲食文化，但最後這種堅持卻成了拖垮自己生意的主要原因。其實採用自然成長方法生產的食物，價格為什麼會這樣昂貴？針對這個問題，我造訪了一個本地的農場。離多倫多以西兩個多小時車程的 type='text'>赴這個晚宴前心情很差。整日的細雨，疲倦的身體，酸痛的網球肘，真想找個藉口爽約待在家裡。乘著老化又沒有效率的街車，經過因罷工而滿街垃圾臭氣沖天的多市街道，花上一小時才到達這間其實只要步行三十分鐘的餐廳。說真的，如此的折騰幾乎令胃口全消了。幸好，推門進去後是另一個世界。柔和的燈光透過用燈管束起而成的燈罩，令簡約的裝璜增添一種迷人的浪漫感。輕快的背景音樂跟賓客的歡笑聲和諧地互相配合，服務生笑臉迎人令人賓至如歸。人群背後餐室的盡頭那酒吧桌上，靜靜的躺著今晚的主角們：一副經兩個多月乾式熟成的豬頭，和一瓶瓶來自尼加拉瓜酒區不同酒莊的 type='text'>豬不是豬已不再是豬</title><summary type='text'>最近餐廳來了一種新材料：Tamworth 品種的豬肉。這種豬的肉質肥美，味道濃郁，早在十九世紀初的時候在加拿大很盛行。可是 Tamworth 豬必須在户外走動覓食，才可以健康成長，所以在六十年代起豬房監禁式飼養方法盛行後，便開始被冷落淘汰。Tamworth 的數目亦因此大減，2005年在加拿大更只有四隻新豬出生，令這品種的豬幾乎於加拿大絕跡，情況一度險峻。可幸的是自2008年起，因為老饕們重新發現 Tamworth 豐富的肉味，加上很多餐廳開始用這種豬肉自家製作 charcuterie，令 Tamworth 的出生率逐漸攀升，開始脫離「危急」（critical）而成為「快要絕種」（endangered）的級別。而事實上，要拯救 Tamworth 用餐，想看看別人做意大利菜不同的方法。這間餐廳的後園很舒服，坐在這裡可以感受一下在塔斯卡尼陽光下用餐的氣氛。他們的前菜做得不錯，用料也很新鮮，所以這間餐廳在網路上有不錯的評語。可是他們的gnocchi卻令人有點失望，咬下去好像在吃膠一樣，而且有種粗糙的感覺，跟我經驗中質感要鬆軟、入口即溶的 gnocchi 剛好相反。追問之下，原來是餐廳購入的冷藏產品。餐廳買現成的 gnocchi 是可以理解的，因為要把意大利麵做得好需要花上很多工夫。Gnocchi 一般是用 Russet 馬鈴薯製成的，程序是先把馬鈴薯連皮煮至剛熟，如果煮得太久會令馬鈴薯積聚過多水份，到時候便乾脆改為煮薯泥好了。煮熟後的馬鈴薯略為放涼至不燙手，但感覺仍溫暖的時候，便把外皮削去，然後把馬鈴薯壓成糊狀。之後便慢慢把麵粉加進到馬鈴薯泥裡，</summary><link rel='replies' （中文名稱「廚魔」）的大廚 Alvin Leung 最為人熟識。但鮮為人知的是，這位出生於英國，在加拿大成長的「廚魔」，五年多前開始經營第一間餐廳之前是一名執業機械工程師，對專業煮菜亳無經驗，甚至沒有接受過正式的廚藝訓練；卻憑著不斷看書鑽研苦學，終於在香港這片餐飲事業競爭激烈的商場上，成功打出一片天。店名打著要「創新」的旗號，餐廳的賣點是「x-treme」中菜，所持的理念是以傳統食譜為藍本，用時尚富創意的烹調方法和材料，把過去的經驗智慧和現代的知識技術，微妙地融合一起。例如 yourself」。真的一點也沒錯。在一個完美的世界裡，做廚師和其他從事藝術創作的人一樣，一定要先對自己的媒體和對像有濃厚的興趣和感受，才會有感到人心的作品。可是現實裡，做廚師的壓力很大。廚房裡工作的人有很多脾氣，很多人有 attitude，在有限的時間裡，有無限的工作，而且是不斷重複重複再重複的工作。人和事的煎熬，把所有對廚師的浪漫聯想，一息間化為烏有。想起當初以為可以用這個職業，去「幫助」去「改變」其他人，可是還沒有去「改變」人，自己已經讓廚房文化改變了。所以做廚師最大的挑戰，是如何在這種環境下仍能保持那種熱忱，從重複的工作中找到滿足，找到喜悅。</summary><link rel='replies' Lee 那間 Splendido　做 stage 時學的。理論上牛仔骨髓要用水浸十二個小時以上，好讓血水流出，但因時間關係，我只浸了三四個小時，還一邊用力把血水迫出。結果效果不錯啊。另一位主角腹肉牛排（hanger steak）也很不錯。Hanger steak　也叫「butcher's steak」，因為一頭牛只有一塊，而且肉質很嫩肉味很好，所以屠夫一般會留給自己而不賣。我媽很厲害，吃一口就知道是上佳的肉。雖然她做菜的技術每況越下，但她的味雷一流，什麼好吃不好吃她一試便知道。配菜用了不同顏色的甜菜和胡蘿蔔。很喜歡這種秋色。</summary><link rel='replies' type='application/atom+xml' trackball，加上很刻意的留意姿勢，病情可算是控制了一點。很奇怪，做了七年多的電腦工作也沒事，反而做了七個多月的廚師便惹上了這煩人的病。今天放假，一直拿着 Art Culinaire 讀了兩個多小時，卻只讀了兩頁，大部份的時間是一邊看一邊在睡，腦裡不斷出現工作的情境。這樣的情況不只一次了，有幾晚做夢也是在煮菜，下班了就像沒下班（薪金卻只拿了一半，ㄎㄎ）。Pizzeria Libretto type='text'>最近被診斷患上腕道症候群。記憶中有一天亂按自己的手，啪啪幾聲後，自此便頑疾纏生了。昨晚忘了帶手套睡覺，整天有麻痺的感覺。我想這篇以後，我會減少在這裡寫文章了。墨西哥人「墨記」，在美國是出名勞動工人的支柱，特別在餐飲業。聽說在西雅圖一間出名的中國餐館「又一軒」，差不多都是「墨記」廚師。墨西哥人煮中國菜，當時的感覺是很好笑，也對那間餐館的印像打了折扣。想不到現在是我，一個中國人，在一間號稱販賣正宗意大利菜的餐廳，煮著意大利人的家鄉麵。謝謝老闆的信任，希望不會把客人趕走吧。</summary><link Satori　做了差不多一年也是零零落落的一兩桌客人，甚至試過連續兩晚也沒有生意。又欠租又欠薪，最後難逃被封店的厄運。Satori落魄潦倒到今天這個境地，依我的觀察有以下三點：１：大廚難辭其咎。我不只一次聽到他說不熟識餐廳的客路是什麼。試問你連該怎樣定位，目標客人是誰也弄不清，怎能取悅食客？他又多次為冷淡的生意找直口，說因為有電影節呀藝術節呀等等，反正都是別人的錯。不肯承認錯誤，不肯正視問題，不去想辦法改進，怎能有進步？２：老闆用人失當。他請了這個大廚不在話下，他所請的服務生同樣很爛。Satori不但沒有hospitality可言，連基本的服務也不足。我曾經就要多次把煮好的菜，親自送到服務生的手上，免得食物冷卻。</summary><link West　交界有一所新的餐廳，剛開業的那一天，在沒有任何媒體宣傳下，已經全場爆滿，６４個座位做了７４宗生意。之後的兩個多星期生意一天比一天好，昨天更迫近每晚三百人次，成為網絡上的熱門話題。雖然客人在六點過後每每要等上３０分鐘以上，有時更下着大雨，但客人的熱情似乎沒有因此而減去。他們願意等，因為這裡有個從意大利Naples運過來的wood burning type='text'>台灣的餐飲市場，上有鼎泰豐集團式的經營，下有夜市小攤加盟式的運作，左有王品在打做他的王國，右有丹堤怡客85度C星巴克連鎖式24小時不斷的營運着。當每一間能在競爭激烈的市場中站得著的餐廳，都在想辦法擴充，增加市佔率的時候，總有一些老牌餐廳能在風聲鶴唳中迄立不倒。他們不僅沒有分店，沒有新潮的裝璜，更沒有利好的店面。像明福這間老字號，坐落於冷冷清清的橫巷，門面一點也不起眼，卻想不到有很多市井小民、政商名人，都傾倒在他的料理底下，而且名氣更響亮到日本。這間只有六張圓桌，不作外賣，不作外燴的店，主廚「阿明師」就把所有的精神，放在這六桌的客人身上。能夠有本事令吳宇森、鄭裕玲、連戰、王金平、張忠謀、辜濂松、吳東亮、蔡明忠等成為坐上客的，當然是因為有實力能收買人心的料理吧。他們的鎮店招牌菜之一是「一品佛跳牆」，上等的材料，精準的火候，自然成為必點的菜。可惜我們預算有限，無緣品嘗。我們點了一些特色小菜，</summary><link type='text'>台灣的夜市說白了其實是英雄會。這廂有人手起刀落，極其手快的把一塊塊滷味平均整齊切割後一手收錢一手交貨；那廂有人把好幾份的蚵仔在熱鐵板上分開炒熟，在不知不覺間下了調味，然後用蛋液乾淨俐落的把各份蚵仔包起整合，手腳功夫絕不遜色於鐵板燒師傅。再走遠一點，有人大聲叫賣鼎邊挫，務求用熱情換取食客的垂青。但見師傅在熱烘烘的鍋鼎邊，熟練地把米漿從鍋邊淋上，迅速把米漿煮熟成為白片。師傅再把這些白片切成小塊，加上高湯和各類材料如金針、香菇、木耳、魷魚、小魚幹、竹筍、高麗菜、內容豐富好料極多，一碗遠近馳名的鼎邊銼便這樣誕生。其實就算沒有店家在旁呐喊拉客，這樣精彩的功夫和食物，加上才幾十元一大碗的銷魂價，已是最有力的賣點。夜市找到同類的食物在所難免，競爭當然很大。如果你賣的產品沒有什麼手工可發揮（如檸檬紅茶或者現成的香腸等），更要使出其他的法寶招攬客人。譬如圖中便是兩個極端的例子：</summary><link type='text'>其實不需要在餐館吃得多才知道餐飲業的成功秘訣，不過我後知後覺，沒有親自嘗過，總不能下定論。但只要走進這間人氣超旺，位於餐飲心臟地帶北市永康街的「喫飯食堂」，必定明白她成功之道，因為所有的秘訣，都掛在牆上，刻在眉心了。首先看到的是她大大的招牌，食客必定知道來這裡的目的便是「喫飯」，而她的格局就是「食堂」。再看招牌後的註腳：「台灣美食」、「好吃、快速、經濟」，完全吻合來者一切的要求，再加上門口終日都有的人龍，就算再不知不覺，也應該略知一二吧？店內沒有餐牌，只有一塊塊刻有各種小菜名稱的小木版，整整齊齊的掛在門口當眼的地方。如果不知道那小菜有什麼材料也沒關係，因為你可以從透明冰箱中看見各種食材的盧山真面目。再不明白的話，可以詢問站在門口負責下單的服務生，他會幫忙介召好菜給你。當你點好所要的菜後，你可以趁還要等位的時候，看看掛在門口的大木版。木版上面刻有喫飯食堂的開業心志「頭家的夢」。這「夢」</summary><link type='text'>明星效應，似乎是一個很好的行銷術。產品有明星做代言人，餐廳也要有星星拱照。食方如是，這間位於信義敦化路口的「大提琴聲音廚房」則由拿過金馬獎，金鐘獎和金曲獎的音樂鬼才范宗沛主持。不過，吸引我走進這餐廳的，不是范宗沛的名氣（因為我事前跟本不知道是他的餐廳），而是在網絡上有好的評價。最重要的是地點很近我家，走路二十分鐘便到。剛踏進這餐廳便感受到她高貴的氣質：暗淡的燈光，穿著整齊的服務生，小小的舞台上擺放着大提琴，低音大提琴，和三角鋼琴。剛坐下，服務生便送上餐牌。正想點菜的時候，服務生說他們有套餐，分三種不同的價位，菜色由他們決定。我們說想點餐牌上一些的菜，服務生說「都可以」，又說其他的都可以由他們負責點。我沒說想要套餐啊？為什麼要幫我點。聽得一頭霧水，後來才想到他們想要定一個最低消費，大慨他們不想我們只點一個主菜，便可安坐聽范宗沛一小時的大提琴表演吧？我說想要一個煎鵪鶉沙拉做前菜，</summary><link type='text'>來到位於北市民生西路的「波麗路」，就像走進時光大道，回到日治時代的老台灣。從捷運雙連站一路沿民生西路往西走，你會經過著名的寧夏夜市，穿越夜市熱鬧的人潮後，便會發覺民生西路兩旁的古老建築物仍迄立不倒。從掛在外牆古老的街招來看，你會感受到這區昔日的繁華。波麗路餐廳是台灣最古老的西餐廳，創立於西元1934年，已經有七十幾年歷史。據說這裡曾是很多人相親，許下海誓山盟的熱門地方。這實在不難想像，因為這裡確實很優雅浪漫。走進餐廳，我便被他們那些 mid century modern　的裝璜擺設吸引着。加上那柔和的燈光，那輕快的圓舞曲，那二、三十年代的味道，那穿着白制服的伯伯服務生，着實把我們迷倒了。除了裝璜很復刻外，餐具也很特別。像用這種便當圓鐵盤盛飯的餐廳，我相信只此一家。他們的食物大部份也很好。我特別欣賞他們的湯，我們的洋蔥湯和牛尾湯都很濃很夠味道。其他的食物如鴨子飯，牛排羊排也不過不失。</summary><link type='text'>對「阿正廚坊」抱有很大的期望，可是太大的期望很容易變成失望。坐落於高級商業中心的阿正廚坊，似乎擁有高級上班族期盼的元素：很商業化的裝璜，有很多選擇但不保証有供應的商業套餐，加上食物有體面地堆砌着，再來一個請客時會心安理得的價錢。這一切的確吸引了不少穿西裝的食客。或許我們都是Ｔ恤牛仔褲拖鞋的關係，跟整個氣氛環境不一致，所得的服務也很不一樣．．．至少，我們是自己走去找一張枱坐，要自己拿餐巾，走離自己的坐位找服務生點菜。這樣的服務不提也罷，硬要給１０﹪服務金也算了。打開餐單，倒是有點吸引。好不容易找到了服務生點菜，她說青竹葉捲田樂味噌魚早已沒有了，於是我們點了冬瓜燉牛腩，煎豬排佐蒜味奶油醬，和服務生極力推荐的日式鰻魚丼。其實食物做得不錯，可是要500元一份便覺得有點不值。席間有另一枱客人坐下，他們便沒有我們那麼幸運，他們點什麼也賣清光，到最後服務生又再極力推荐日式鰻魚丼。</summary><link type='text'>「食方」是我一直期待要去的餐廳，除了因為想嘗試她的新派台灣料理外，主要是想試試自己的「運氣」，看看可不可以在那裡工作。其實我對台菜不太認識，只知道她帶著很多中國菜系和多國料裡的影子：閩菜，客家菜，粵菜，日式料裡，大陸家鄉菜，再加上美國、東南亞及歐洲等地的烹飪風格，集多國多派於大成。這種海納百川，有容乃大的做菜精神，其真是 fusion　菜的昇華。拋了一大堆可以在 Wiki　裡找到的資料後，實際嘗試了台菜後跟我所認知的不謀而合。就以食方為例，她們是少數帶有 slow food　講求食材原產地的精神的餐廳。她們甚至自購田園，種植有機無汙染的「合鴨米」，務要把最好的食材帶給食客。除了講求食材外，她們更把台菜包裝成中菜式的懷石料理，再用法國菜上菜的方式，務求利用不同國家做菜的優點，把食物最美的一面逞獻給食客。試問帶着這個心做菜，怎能叫人不心動？單看相片，便感受到她們的誠意。</summary><link rel='replies' 和我的背景差不多：同樣在華盛頓州做過工程師，同樣要去台灣，同樣要埋首於餐飲業。唯一不同的是，當我還百籌莫展，不知怎樣創業的時候，John已由小小的街邊檔，輾轉做到師大夜市的店面。雖然租金昂貴（據他的太太說要12萬台幣一個月），而且生意也沒我想像中理想（因為在不同的時間經過了他們的店面好幾次，也沒有出現像其他夜市一樣的搶購人潮），但總算可以經營到現在，而且在網絡上似乎有一班忠實的支持者。吃過他們的冰淇淋後，說真的沒有什麼特別。很多人喜愛的起士口味，的確是很香很滑，但在這個100元便有豐富晚餐交易的社會裡，一球冰淇淋索價55元便覺得有點昂貴奢華。不過想深一層，他們賣的不僅是手工製作，用鮮牛奶而不是奶粉做的冰淇淋；他們賣的更是一份熱誠</summary><link type='text'>台北其實是一個很可愛的城市。至少，在我有限的認知中我是這樣的認定。在台北跑來跑去快兩個星期的時間，所看見所感受到的是她的情。除了連鎖式快餐店服務生機械式的招待外，我所遇到的都是很窩心誠懇的服務。就像這家位於台電大樓附近，專做雲南緬甸菜的「巫雲」，便是一個很好的例子。我來到巫雲已經差不多過了午飯時間，他們的大門也早已關起，室內燈光轉暗，一個客人也沒有。一般來說，在這個情況下我會打退堂鼓，找別的餐廳吃飯去。可是看見他很有特色的設計，好奇心驅使下，便硬着頭皮走進去。店員看到我走進了有點驚訝，也好像有點失望，大慨是因為我會打攪他們午休的時間吧。店裡沒有很花巧做作的裝璜，甚至有很多傢俱也是自己做，卻給人一種很樸實很舒服很有家的感覺。老闆「老五」更搜集各種黑膠唱片超過五萬多隻。所以除了老闆的身份外，他更負責打碟的工作。不能不提的，是老五外表超有個性，就像一個很脫俗的藝術家：長長的頭髮和有點凌亂的鬍鬚</summary><link type='text'>Summerlicious　的確是一個很好的 promotion，兩日以來已做了近一百個餐，是平日的兩三倍。Appetizer　中我覺得「Mushroom and goat cheese croustinis」很不錯，因為很大機會是我調味的，哈哈（其實是 mushroom　本身已很有味道）。主菜我比較喜歡「Duo of beef」，但其他兩個菜也不錯。最近重溫 Jobs Chef》主力介召他在美國殿堂級廚藝學府 The Culinary Institute of America 學習廚藝的所見所聞。Michael Ruhlman 本身是一位記者，大慨是因為他對做菜的濃厚興趣，加上記者要深入虎穴發掘真相的求知精神，他決定放下工作，在這所廚藝界的「哈佛」學院修讀兩年的課程，並且記下了這段日子的點點滴滴。這些似曾相識的遭遇，提醒了我原來才剛離開學校一個多月。對啊，才一個月，對學校所教的東西，斍有點隔世。或許現實的世界，跟在學校裡有天壤之別吧（誰會再用 roux History》，中文譯作《鹽─人與自然的動人交會》。但我卻覺得人和這種唯一可以食用的石頭的交往，也不盡是「動人」的故事。相反，商家政府為了掙取這必須的天然資源而引發的戰爭苛政和利用不道德的生意手段達到目的，在每一個時代每一個國家也可以看到。就像今天我們在掙取石油貴重金屬海產資源一樣，人們不斷發掘不斷要擁有的心沒有休止的一刻。怪不得 Bush 在放假時也看這本書。不過，天曉得他是要反省，還是要設計更高的計謀。撇下人性的陰暗，鹽巴在人類文化中，確實有一個精彩的角色。最令我佩服的，是李冰在戰國時代建造都江堰的時候，發現了很多鹽泉。他利用了中空的竹子，把重物打進同一個地方，直至開了很深的洞。然後他在不知不覺間，發現了天然氣可以用來燃燒生火，於是因利成便，用天然氣燃燒濃鹽水以提鍊鹽巴。這是人類歴史上使用天然氣的首次記載，</summary><link type='text'>看着新聞裡的畫面，那呼天愴地的哭號，令人心重如鉛。學校倒塌，很多家長失去生命中唯一的寶寶的傷痛，實在令人心酸。昨晚聽朋友說關於家人朋友患病的經歷，傾家盪產去買一個又一個落空的治愈希望。其實面對生命的唯一，路再難走，誰也會掙扎到最後一秒。那管在其他人來說這是很愚蠢的事。臨別的時候，朋友告訴我他舅舅的故事。做餐飲的舅舅剛開始時很窮很辛苦。老婆女兒的衣服，也是靠親戚的捐助。可是因為他不斷創新，對做菜有很高的要求，慢慢的把餐廳做得很好很大。現在第三間分店可以趕得及在奧運前在北京開幕。姐姐今天在電郵中談到地震的事說了一句：only interview。事緣上一個星期五，OB　的人事部有人來找我，說要看看我為什麼要離開等等的（因為最近離開那餐廳的人實在太多了）。雖然人事部做事總是後知後覺，但在一間餐廳來說已是難能可貴。昨天又到了 Splendido　試工，上次跟　Chef David Lee 緣慳一面，今次跟他見面後有種像見官一樣的感覺：在廚房裡千萬不要惹怒他，做菜要精確專業，否則一定會受語言暴力的煎熬。就像跟我一起做 "Splendido"，中文名是天小姐改的啦）面試。「迪多」是由做過星星餐廳 Le Soufflé 廚師的 David Lee 掌舵。他們做的菜很精細，在多倫多也很有「地位」（雖然 Chowhound 的讀者 review 不太理想）。但也因為他們做的菜很精細的關係，預備工作也很多。就像我今天便很幸苦的清潔了 bone marrow　和　wild morel mushrooms Batali，然後暫停了編輯的工作，全職投入　Mario　的 Babbo 廚房中工作一年多的時間。四十多歲，對專業做菜一竅不通，甘心從做學徒開始，然後一步一步的做 line type='text'>前兩天被滾油熨去了一塊皮．．．　多得同事不小心把滾油倒在我手上。因受傷的部位經常活動，所以復元得很慢。同一天，我的袋被別人不小心拿去了，結果我穿着髒透了的制服，坐了一個小時的 TTC 回家。頭髮凌亂，目光呆滯，左手拿着沾滿了菜汁的圍裙，右手拿着我的刀袋。對周遭的事視而不見，聽而不聞。在列車上有一刻，我想到我在西雅圖的理髮師．．．當他知道我要做廚師，便很擔心的叫我再想清楚。他說寫 software　寫錯了，可以 debug　可以改，但在廚房工作，出錯了很容易令自己或別人受傷。他說他有一個朋友，在做甜點心時把滾熱的糖漿倒在手上。因為糖漿不易即時用水沖走，結果一大塊皮便在痛苦中被撕走了．．．當時我在想，只要小心一點應該問題不大。結果還是有意外。所以在廚房工作就像軍訓一樣，有什麼出錯，一定被駡得死去活來。有一回，有位侍應生因為要拿取放在我們身旁的物件，走進了 看見這相，感覺就像回到昔日在西雅圖的日子．．．那種寫意浪慢的生活，原來我一早已經擁有（過）了。可是那時候，我就像這班在掘蜆的人一像，只懂一直看着地，找尋下一只蛤蜊的踪影。當有機會舉頭一看，才發現自己身處的地方這樣美。可是再美也不可以擁有的。把它收在記憶裡，偶然想想也很開心了。那酒店的工作，Chef Lampard 進行第二次面試。今回要煮一道主菜給三個廚師吃，當中包括行政總廚 Chef Lampard。有趣的是，我可以用任何在這個廚房找到的材料，但時限只有一個半小時。結果我用了十五分鐘了解這個有三個學校廚房般大的迷宮（他們洗碗的地方已經有一個班房那樣大了），看看有什麼可以拿來作菜。然後又用了十五分鐘搜集所有要用的材料和工具。結果我覺得那一份一份真空處理獨立包裝足有一寸厚的豬排（Center Cut Pork Chop, Frenched）狀態甚勇，所以我決定用它。然後我發覺冰箱裡有我在工作時一直在切的菜：歐洲防風草（parsnip）、大頭菜(rutabaga)、紅蘿蔔和蘆筍，所以我二話不說，便用它們作配菜。肉跟菜都有了，最後要找的澱粉質我用了手指馬鈴薯（fingerling potato）。</summary><link rel='replies' type='text'>在廚房工作的第二個星期過去了。工作一如過往，是不斷的切菜和做「runner」，意思就是別的　cook　需要些什麼，便要第一時間給他們。雖然這是小小小差事，但也很重要。特別是當有幾個 order 一同來到而有錯誤的話，整個廚房便會很混亂了。切菜時發生工業意外，在所難免。回到家中洗澡的時候，那裡有損傷便立刻知道。清水就像顯影劑一樣，把一道一道的傷痕表露無遺（其實是因為在痛）。也許在工作時，傷口被菜汁泥土等等覆蓋著而感受不到痛楚吧．．．找藥水膠布？我曾經看過我的同事給滾湯灼傷手，本來白白的皮膚，立刻通紅，但他好像若無其事的（不，是真的若無其事）。我還有一位同事，我看她的手腕全是烙印。如果她不是在煮菜，還會以為是那些常常割脈自殘的邊沿青年。所以我說，小小的刀傷要找藥水膠布，別人會以為我是看　Food He goes on explaining that most of the recipes he includs in the book are pretty classic and they can easily be found elsewhere. city」，遇見了比我小十多年的　Vicky Cheng。他年紀輕輕便贏了很多比賽，更在　Auberge du Pommier　做　Junior Sous Chef，更會很快轉到　Canoe　幫忙。原來他在　Auberge du Pommier　做了六年的時間。好一個六年，才做到　Sous，對於年過三十的我，真是遙不可及的付出，何況我可能要用更長的時間，也別想可以像　Patricia type='text'>新工作昨天開始。從中午三時開始，一直不停的做了九個多小時。一直在切菜，一直在切菜．．．沒有去洗手間，水喝了兩杯。連到十點多吃飯的時候也一直要做清潔的工作。後來發覺皮膚都開了，但傷口不深：）我想是一直切菜的原因吧。回到家可以躺在床上已差不多兩點了。但很奇怪，一點也不覺得累。也不覺得做了那麼長的時間。廚師們每一個也很投入，他們比我做得更長的時間，有的燒傷了也是淡然一笑，塗上牛油便算了。放工的時候也在不停的討論菜式。這是很好的一天，我正式在廚房工作的第一天。</summary><link something more interesting, like putting in cheese instead of black sesame, and use basil oil, tomato, and squid ink to color the dough... haha, yup, it's like an Italian style 湯圓.. or ravioli to be Thanks to a classmate from the Wine Tasting class I got a free ticket--although i still need to purchase "sampling tickets" as a currency to buy food and wine in the event. I'm so looking forward to meeting some great chefs, if it is at all possible. consommè」實屬多此一舉，湯煮得太久味道變得怪怪的。幸好鴨胸煎得不錯，味道也很好。其實要食物好吃，何需大費周章？【個案二】柏根地燉牛肉 （Bœuf bourguignon）是法國里昂菜（Lyonnais）的經典。Paul Bocuse 是近代法國菜的經典人物，被譽為是20世紀法國最偉大的主廚之一。植根於里昂。本來，經典的里昂菜由經典的里昂主廚所撰寫的食譜一定不差，可是卻大失所望。不過，我想是我的問題吧？其實這個菜的汁很好，只是用後腿眼肉（eye of round）實在太瘦，像吃乾柴一樣。其實之前也作過這菜，用了上好的肋眼（rib eye），而且非常好吃。看來，忠於食譜，得付上代價．．．【個案三】同樣出自於
